			<content:encoded><![CDATA[<h2>Yesterday I went to Blanco, TX to see my doctor, Dr. Black.  Those of you who watched my video blogs might remember her.  She is a doctor who I can trust, which is why I drive all the way out to Blanco to see her.  Originally I was seeing a doctor at TX Med Clinic because it was classified as a work injury but when we got the diagnosis as <a class="zem_slink" title="Plantar fasciitis" rel="wikipedia" href="http://en.wikipedia.org/wiki/Plantar_fasciitis">plantar fasciitis</a> I was let go.  Since I was still in so much pain, I decided to go see my doctor.  She reviewed the xrays and said that there are several fractures in the bottom of my foot- better known as <a class="zem_slink" title="Stress fracture" rel="wikipedia" href="http://en.wikipedia.org/wiki/Stress_fracture">stress fractures</a> and this is not plantar fasciitis at all.  I think that is good.  I hope that is good.  She gave me stronger pain meds and more strict restrictions.  Her note actually says no walking or standing at all!  What!?!?!  I thought the previous one was strict. So, tomorrow I go to get a <a class="zem_slink" title="Bone scan" rel="wikipedia" href="http://en.wikipedia.org/wiki/Bone_scan">bone scan</a> so she can confirm what is going on.  I just want to pain to go away.  It has been 4 weeks already!!  I can&#8217;t take it much longer.  So, please keep me in your prayers.</p>
<p>Today was not a good day for eating right.  I was out of food- need to go grocery shopping and there was no time today.  I had school this morning, then I came home for a couple of hours to study and back to school.  I didn&#8217;t get home this evening until 8:30pm.</p>
<p>I do have to say that I adore Chemistry class!  I have the coolest professor!  His name is Dr. Shukla and he is a chemist at Southwest Medical Research on 410 over here, by me.  He is not a professor by trade.  He is a chemist!  Going to his class is like speed for me.  I come home all excited and make Mike listen to all the things I learned.  I know that he is not nearly as enthralled with this as I am, but he puts on a good face.  This is my favorite class all week.  Thankfully, I meet with him 3 times a week.  No complaints here!  He makes me want to be a chemist when I grow up <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Well, that is it for me tonight.  I am going to make a strong attempt to go grocery shopping tomorrow so that I can make dinner at home.  I work late and I have those doctor appointments so I am not going to make a promise.  I will <em>try.</em></h2>

			<content:encoded><![CDATA[<h2>First of all, I am not quitting!  I know there have been some rumors going around as a result of my recent lack of communication.  I am still on board. </p>
<p>Secondly, I am going to update everyone on what has been going on since I last wrote.  Last Monday I started up school again, as well as did both of my kiddos.  This is taking so much more of my attention than I previously planned.  This is my heaviest semester yet, with 13 hours.  Along with my 40+ hour job, I have very little time to share with my family and friends.  Just so all of y&#8217;all understand, I go to class Tuesday and Thursday from 8-2pm and then in the evenings from 7-8:30pm and on Wednesday evening from 6-9pm.  That leaves Monday, Friday, Saturday and Sunday evenings for work and family.  Mike works Thursday, Friday and Saturday evenings so I can only spend family time (the whole family together) on Monday and Sunday evenings.  That is not much!  at all!  I am not trying to complain to you, I am just trying to help you understand what is going on here, in the Velasquez household.  So, if you call, or email, or both <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  please know that I am not trying to ignore you.  I am buried underneath a mound of school books and work!!  I just thank God that I have this ability to do both and maintain a 4.0 average in school!!  Not everyone can do that!  And I love school more than you can imagine!  I look so forward to my classes (well most of them anyway).</p>
<p>Now, about my foot.  Not getting much better.  I am going to a dr appointment with Dr. Black tomorrow afternoon.  I want her to take a look at my foot, and my x-rays and see if there is possibly a stronger pain reliever because I am in an immense amount of pain about 12 out of the 24 hours in the day.  That is making me grumpy and irritable.  I don&#8217;t want to be grumpy and irritable.  I also will be getting my first series of shots for nursing school!!  I am excited!  One step closer!  I have to have a series of three shots and tomorrow is the beginning.  I will <em>try </em>to update you tomorrow after Chemistry lab.</p>
<p>If you have any questions, or concerns, please call me or better yet, text me!  I can even reply to texts in most of my classes <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   I hope you understand.  I am on board and will try to do a better job of posting my meals so that at the very least you can hold me accountable for that.</p>

			<content:encoded><![CDATA[<p>I am so sorry that I did not blog yesterday.  It was a day that was so packed full I didn&#8217;t even get everything done.  With school starting this morning, the to do list was massive.  However, I did manage a little bit of relaxation.  I was off from work so I didn&#8217;t even open my email.  Mikaela and I went to Sams to get a few things for this week&#8217;s meals and we exchanged a shirt that she got from her Grandpa for school.  It was left overs day so we had a little bit of everything and a salad!  The list would be too long to put down, so take my word for it!  It was good!!</p>
<p>Today I am working.  I put out next month&#8217;s calendars to each property so they know what I am up to.  I planned my Halloween Party!!  Everyone is invited!!  We do it huge!  It is mostly for the kids to show off their costumes to their friends and carve pumpkins and just have some fun!  So, mark your calendars for October 30th!!</p>
<p>I hope everyone has a great time at Comanche Park!  Wish I could be there but I actually have to work.  I will be handing out frozen margaritas this evening.  Everyone needs to blog so I can &#8220;feel&#8221; like I was there!  Trust me, I am there in spirit!</p>
<p>I&#8217;ll post again soon.  Cod is in the oven for lunch.  Mmmm&#8230;</p>

			<content:encoded><![CDATA[<p>As I said yesterday, I hosted a Back 2 School Bash at Sunray Apartments today!  It was huge!!  We had about 75 guests and everyone had a blast!! </p>

<p>Here is a picture of one of the kids going down the inflatable water slide.  I was really jealous!  I wanted to cool off in the water so bad.  It looked like fun!  Plus we had a dunking booth, water balloons, water guns, and water games.  I served hot dogs, chips, pickles, popcorn, sodas, and water.  I will admit that I ate 3 hot dogs and I know that they weren&#8217;t the best choice but I was so hungry.  And, I ate before I went over there but after being in the sun and sweating so much, I got really hungry.  In fact, I ate the hot dogs so fast that I didn&#8217;t taste them.  I was eating for hunger not for flavor.  They were Oscar Meyer hot dogs so I am not sure what the nutritional value is, but what&#8217;s done is done.  Moving on.<br />
This morning before I left for work, I made a pasta salad with tri color pasta, broccoli, grape tomatoes, black whole olives, mozzarella cheese, with light zesty italian dressing.  So, by the time I came home that was perfect!</p>
<p>So, while I took a shower, Mikaela popped some broccoli filled chicken breasts that we bought at Sams, in the oven.  By the time I got out and cooled off a little bit, it was time for dinner.  We decided not to have the garden salad because a lot of the veggies in that were already in the pasta salad.  Plus, that is what Mikaela had for lunch and I think she wasn&#8217;t looking so forward to that again.  So, we had chicken and pasta salad and it was great!  That chicken is like 230 calories and tastes like double that!!  I would recommend to anyone!</p>
<p>So, brings me to tonight.  My foot is killing me so I have it on ice and I have another ice pack in the wing for when this one is melted.  I tried really hard to stay off of it, but it was really hard.  I want to do my job well and that requires me to walk around and be on my feet!  I feel bad sitting all the time.  Anyway, so I am paying for that now.  Hopefully it will be better in the morning.  Mikaela and I already planned next weeks dinners and we wrote out a grocery list so I&#8217;ve got things to do tomorrow.  No time for hurt patas.</p>

<p>So today didn&#8217;t start out so well, but you can see by the picture that it has ended well.</p>
<p>To start I had to make 50 lunches for my Lunch 2 Go event at one of my apartment communities.  I made 50 turkey and cheese sandwiches and the kiddos helped me bag 50 pickle spears and 50 baggies of tomato slices and onion slices.  Then we put it all together with a bag of chips and a bottle water.  So, guess what we had for lunch?  Yup!  Turkey sandwiches.  I make theirs on whole wheat bollios but mine I made with my own sliced bread.  I don&#8217;t need all the calories.  Fortunately, I was able to simply drop off the lunches and Sonya, the asst manager there, offered to hand them out so that I wouldn&#8217;t be on my feet.  That really helped out.</p>
<p>After lunch I went to Sams to shop for a Back 2 School Bash that I have tomorrow at another apartment community.  I bought 180 hot dogs and buns and all the fixins, 100 bags of chips, 100 cans of soda, and a few other necessities.  By this time I was already really tired and my foot was killing me but my work was not done.  I took all the groceries to Sunray, where we are having the party tomorrow, and unloaded the car into the office.  Thankfully one of the employees there helped me with the heavy stuff.  After that I put out some posters I made on the exit gates to remind all the residents about the party and then I headed home.</p>
<p>When I got home, I started cooking dinner.  Tonight was fish night so I pan seared tilapia, baked some red potatoes, steamed some corn on the cob and make a huge salad, with all the colors <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />   I did not eat the corn because I didn&#8217;t need the extra carbs and I&#8217;m not crazy about it anyway.  I was all excited because this is the first time that I made fish.  Fish always terrified me so I steered clear from cooking it.  But it was pretty easy and tasted wonderful, especially paired with my homemade tartar sauce (thanks to Nanny for the recipes).</p>
<p>Mikeala and Mikey cleaned the kitchen and I bagged 5 gallons of pickles- the big ones like you get at the movie theater.  Then, I filled 200 water balloons.  That is what I just finished a few minutes ago.  I was able to do both jobs while sitting down and resting my foot.  The kiddos better love this party!  So much preparation is involved!  But it is all worth it when you see them having so much fun.  Now my fingers are wrinkled and I am soaking wet because a few balloons busted accidentally.  Ok, so we had a little fun filling them <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I am looking forward to sleep tonight and starting a brand new day tomorrow!!  I will try to take some pictures at the party so I can share them with you.  Nighty Night!</p>

<p>Today was a busy day!  I worked all day.  I had a Back to School Pizza Party at Vista Del Rey where I served pizza and sodas and gave out school supplies to all the kiddos who came in.  It was fun because we talked about school.  One boy just moved here from the valley so he is nervous about starting school.  He is going into the 7th grade.  Then a few minutes later another boy came in who said that he was going to go to the same school only 8th grade.  These two boys became fast friends!!  They talked about video games and who stayed up the longest without sleep.  What fun!!  I was so excited because this is why I do this!!  Now we have two boys who are inseparable and one boy who is not so nervous about starting a new school because he has a buddy.</p>
<p>Food&#8230;..  this morning I had pancakes.  I know, probably more carbs than I want but they are almost fat free and I only had a little syrup.  For lunch I had left overs from last night- one sausage link, and handful of rice, and steamed veggies.  For dinner you can see what we ate.  The chicken was not cooked right but it still tasted good.  I covered mine with foil to cook and I think Nanny didn&#8217;t because mine was soggy.  It&#8217;s alright though, cause the flavor was still good.  I had that with a baked potato- the fixins are in the back- all fat free and I did not use any butter.  We also had the most wonderful green beans created by God!  I got them at Sams and they are called French Green Beans.  MMmmm.  I steamed them with some chicken broth for flavor and sprinkled salt and pepper.  I could have eaten those for dinner alone.</p>
<p>That&#8217;s pretty much it!  I&#8217;m getting ready for school to start on Monday.  The kiddos and myself!  I am more nervous and upset than they are because I greatly dislike my schedule this semester.  I will get through it but it is the worst schedule ever!  No lie.  If you don&#8217;t see me all semester, that is why.  Because I am at school!!!  However, I am thankful that God has given me the ability and the desire to go back to school and one day I will be a nurse.  One day&#8230;</p>

<p>I talked yesterday about the importance of a rainbow of colors in every meal.  Here is my first attempt.  For dinner tonight we had steamed veggies consisting of zucchini, peppers (green, red, yellow and orange), mushrooms, carrots, broccoli and red potatoes.  I also made some rice and pan seared sausage.  Now, I followed the transformation serving suggestions.  So, we were allowed one sausage, a fist size serving of rice, and as many veggies as we could eat until we were full.  And guess what??  I didn&#8217;t even need seconds.  I was so satisfied after I finished my plate.  The kids were also satisfied after their first helping.  Mike didn&#8217;t like the rice or the sausage so he just ate veggies.  More power to him!  I liked it all!!!!</p>
<p>Just to update y&#8217;all on my foot&#8230;. I went to my third follow-up appointment today and the outlook is cloudy at best.  My foot is not getting better so I am being referred to a podiatrist.  The doctor said that I HAVE to follow the rules and stay off my foot!!  He said that he would prefer me to be off it 100% of the time but will allow up to 2 hours.  He also said that it is not getting better because I am irritating it by using it.  What a dilemma.  I am an &#8220;on the go&#8221; type of girl.  And this is putting a kink in my day.  So, please pray for me.  I have to take this seriously starting today!!</p>
<p>I think that is just about it.  I am tired and I have a long day planned for tomorrow.  Another scrumptious dinner of color and flavor is planned.  I think we are doing oven fried chicken (not really fried- it&#8217;s Nanny&#8217;s recipe so you know it&#8217;s good), a baked potato and french green beans!  MMMmmmmm&#8230;  I can&#8217;t wait.</p>
